Like tofu, I had been afraid of making vegan sausages on my own for years.  Why?
Store bought vegan sausage varieties had made it too simple. How easy was it for me to just stop into the grocery store and pick some up?

I had mastered tofu and now it was a regular request by my family.  Certainly, I could now do the same with vegan sausages!

I just knew that making them homemade would be too difficult, too time consuming, just too much for me! At the beginning of my vegan leap, I was a novice vegan cook, learning how to whip up great food all over again.  Meat, dairy, and eggs were out, flavor, compassion, and many new ingredients were in.

But that was a few years ago! Now I was an experienced vegan culinary warrior! Certainly I could tackle the intricate and extensive process of making homemade vegan sausages.

I began by researching some delicious looking vegan sausage recipes online.  I took a little from here and a little from there and created my own version.

Everyone was thrilled with the results.

They were super easy to make and cooking them was a piece of cake.

Our next batch will be spicy ones. I can’t believe I was ever afraid to make these!

2 c Vital Wheat Gluten

½ c Nutritional Yeast

1 ½ c Chickpeas Drained (15 oz. can)

1 c Vegetable Stock

¼ c Maple Syrup

2 t Garlic Powder

1 t Onion Powder

2 t Paprika

1 T Dried Chives

4 Mushrooms

1 t Salt

Mix the vital wheat gluten and nutritional yeast together in large bowl and set aside.

Place the rest of the ingredients in a food processor and blend until fairly smooth.  Add this wet mixture to the vital wheat gluten and stir in.  Once most of the liquid is absorbed, knead with your hands until the dough becomes stretchy.  Roll into individual sausage shapes. Wrap in aluminum foil and steam for 40 minutes!  Yep, that’s it.   Don’t be afraid of trying and experimenting with new foods.  You’re just wasting your time and missing out on great new foods!
